moroccanSpicey Mediterranean Chicken

Rub Mix for one whole chicken

1/4 cup coconut oil
Dash of cumin
1 1/2 tsp coriander, pepper and curry powder, garlic powder
A shake of  crushed red pepper flakes if you like it hot
1 1/2 teaspoons garlic powder (or 3 cloves fresh garlic, minced)
1 handful of fresh parsley leaves
Several teaspoons of lemon juice
Salt and pepper to taste

What to do:
Combine all ingredients of the mix and then rub over all the chicken. You can cover this in the fridge for at the least an hour or up to eight hours (the longer the better!).
When ready to roast – turn oven on to cook at 400 degrees and cook for about 35 minutes or until thigh reaches 165 deg. ENJOY!
